1. Prepare. Soak and thoroughly cook soybeans using a validated natto recipe, and prepare clean equipment.

2. Inoculate. Add a dedicated Bacillus subtilis natto starter at the stage and quantity directed by its supplier.

3. Incubate. Arrange beans in suitable containers with the required oxygen access. Follow your recipe for temperature, timing and checks.

I’m Dr. Wanping Hu, a medical oncologist of more than 20 years, a PhD-trained microbiologist and immunologist, and a mother of three.

For much of my career, my world was medicine. But my journey into fermentation became deeply personal at home, while exploring food and fermentation for my family.

As I began making yogurt, kombucha, natto, tempeh and fermented vegetables, I kept encountering one practical problem: different ferments needed different environments.

I couldn’t find one appliance designed to create the different controlled environments these foods needed. So I created FermentPro®.

My hope is bigger than creating another kitchen appliance. I want to help bring fermentation back to the home kitchen—so making fresh, fermented foods can once again become part of everyday family life.

Do I need a special starter?

Yes. Use a dedicated Bacillus subtilis natto starter and follow its instructions. Yogurt cultures and other fermentation starters are not substitutes.

Are soybeans and starter included?

No. This offer is for the FermentPro machine. Purchase soybeans, natto starter and suitable containers separately.

Does natto need air?

Yes. Natto fermentation requires oxygen. Use the container depth, covering and ventilation specified by a validated recipe; do not seal beans in an airtight jar during incubation.

What temperature and time should I use?

Use the settings supplied with your natto starter and a validated recipe. Batch size and preparation matter, so there is no single guaranteed finish time.

How should I store homemade natto?

Cool and refrigerate the finished natto as your validated recipe directs. Follow its storage limits and do not taste a batch with suspected contamination.

Can I use the machine for other foods?

Yes. FermentPro supports a variety of fermentation routines within its operating range. Each food needs its own ingredients, starter, process and settings.
