Your First Batch
1. Prepare. Soak, dehull and cook beans as your validated recipe directs. Follow its acidification and surface-drying steps.
2. Inoculate. Mix with a dedicated tempeh starter at the specified temperature and dose. Use the packaging, thickness and ventilation required by the recipe.
3. Ferment. Set the chamber and monitor the batch, including self-generated heat. Follow the starter guidance for completion and cooling.
4. Cook. Refrigerate or store as directed and cook tempeh thoroughly before eating. Season, sear and enjoy.

I’m Dr. Wanping Hu, a medical oncologist of more than 20 years, a PhD-trained microbiologist and immunologist, and a mother of three.
For much of my career, my world was medicine. But my journey into fermentation became deeply personal at home, while exploring food and fermentation for my family.
As I began making yogurt, kombucha, natto, tempeh and fermented vegetables, I kept encountering one practical problem: different ferments needed different environments.
I couldn’t find one appliance designed to create the different controlled environments these foods needed. So I created FermentPro®.
My hope is bigger than creating another kitchen appliance. I want to help bring fermentation back to the home kitchen—so making fresh, fermented foods can once again become part of everyday family life.

Before You Start
Use a dedicated Rhizopus tempeh starter from a reliable supplier. Follow its recipe and dosing instructions; natto and yogurt starters are not substitutes.

The tempeh culture needs oxygen. Use the perforations, container depth, spacing and ventilation specified by a validated recipe. Do not use airtight packaging during fermentation.
Tempeh generates heat as fermentation develops. Monitor the batch as directed, because its internal temperature can differ from the chamber temperature. Adjust temperature or airflow according to your validated method.
Cook tempeh thoroughly before eating. Follow your validated recipe for cooling, refrigeration, storage limits and cooking.
Begin with a tested soybean recipe. Other beans can require different preparation and conditions; use a validated recipe for the ingredient you choose.
Do not taste a suspect batch. Discard it if contamination is suspected and consult your starter supplier or reliable food-safety guidance before making another batch.
